Easy Winter Recipes

If you are a driver that cooks in the cab of the truck, it can be a struggle to find recipes with little clean-up and low cost. Along with our line of RoadPro 12 Volt Appliances, we have a passion for helping truck drivers live a healthy on-the-go lifestyle. One way to do this, is by preparing meals in the truck.
The two recipes below, are both easy to make and delicious. They can be customized to your specific tastes and complement each other well. Try them for dinner this week and let us know what you think.
RoadPro Chili
Ingredients:
½ cup onion, chopped
½ lb. ground beef
2/3 cup stewed tomatoes
1 cup tomato sauce
1 cup kidney beans
½ cup water
2 tsp chili powder
Garlic powder
Salt
Pepper
Optional toppings: cheddar cheese, sour cream, scallions.
Directions:
1. In the RoadPro Saucepan, sauté the onion and beef until meat is browned and onion is tender. (Approx. 15-20 mins)
2. Stir in the stewed tomatoes with juice, tomato sauce, beans and water.
3. Stir in a dash of chili powder, garlic powder, and salt and pepper to taste.
4. Cover and let simmer for 1 hour.
5. Serve and enjoy!
For a spicier chili, add hot sauce as desired.
RoadPro Cornbread
Ingredients:
1 cup milk
4 Tbsp butter, melted
1 egg
1 cup cornmeal
1 cup flour
½ cup sugar
3 teaspoons baking powder
½ teaspoon salt
Directions:
1. Grease bottom and sides of RoadPro Portable Stove or aluminum pan insert.
2. Combine all ingredients at once and stir, just until flour is moistened (batter will be lumpy).
3. Pour batter into pan.
4. Bake 1:45 or until golden brown and toothpick inserted in center comes out clean.
5. Serve and enjoy!
