What to cook in a truck

We had the chance to chat with our good friend Carolyn O’Byrne and find out what she’s been cooking lately.

Like most professional drivers, she is all about efficiency “whether it is breakfast, lunch, or supper, it is always satisfying to have a good, healthy meal. But something that makes that good meal even better is to know that you didn’t have to spend much time, energy, and effort preparing it. Simple can equal delicious and satisfying.” Simple AND delicious? Sounds like the perfect combo to us.

Carolyn is all about flavor, and her most recent favorite dish to make is sweet potatoes and eggs. “At the first thought of this idea, I wasn’t too keen on this concept, but after trying it once, I am hooked.” She has tried different ways of preparing them, like sautéing the cut up sweet potatoes first and then adding seasonings and scrambled eggs. 

“Since I like to experiment and make a favorite dish as easy as possible, I decided to put my skills to the “simple” test. I thought, ‘Let’s see if this easier method would be just as good,” she explained.

Using the RoadPro Lunch Box Stove, she “washed and placed the whole sweet potato into my glass loaf pan, which fits nicely into the lunch box oven. I cooked it for two to three hours. When it was done, I left the oven on. I left the sweet potato in the pan, scraped the skin off the top part with a fork, and mashed in the center to have room to hold two eggs. I cracked one egg at a time and put them into the indention. Then I added some salt, pepper, chili powder, and garlic powder to season it to my flavor preference. I cooked it again for about 30-45 minutes.”

The obvious next question is…how’d it taste?? According to Carolyn, “the end result was very good. A little different from the sautéed style, but delicious in its own right. Now we have two new ways to use the healthy and fiber-filled sweet potato.”
