What to make in a 12v Slow Cooker

We all know the struggle of choosing what to make for dinner. Combine that struggle with the limitations of cooking on a truck, and the options decline big time.

According to our most recent trucker survey, 80% of professional drivers either cook daily or several times a week while on the road. Therefore, the need for quality appliances and recipe ideas is high.

Carolyn O'Byrne, author of Gut Instinct, shared her most recent meals prepared in the RoadPro slow cooker:

“I recently got a RoadPro slow cooker, which is a small 1.5 quart crock pot. I was eager to try it out, so I decided to dig through the freezer. I found a round steak, but any type of beef would do for this recipe. I needed something small to fit in my RoadPro crock pot and decided that the round steak would work just fine. I figured that this would be just enough for one meal. 

After thawing it, I put it in the pot, added one chopped onion and a large diced carrot, and filled the pot about half way with water. I cooked it in the crock pot for 5 hours. It was so tender it was falling apart. Oh! And the smell …… 

Once I had my meal on a plate, I could not believe how much it made. Because of the size of the crock, I was expecting a meal for one. What a surprise! It was definitely enough for two.”

To make the most of her time and ingredients, she went ahead and cooked meal number two, using the rich broth left behind by the steak.

“For the second meal, I LOVE onion soup, especially when it is cold outside. The problem is, most of it is pre-made. This simple dish is very good for you when it's homemade, and it tastes great! So, I scooped out all of the meat and carrots. If some of the onions came out with it that was fine, but I kept as much as I could in the rich brown meat broth that was left behind in the crock. Then I added another one whole onion chopped, put the lid on, and cooked it overnight, adding Himalayan salt and a little pepper to taste. Bon appetit! Easy, simple, delicious and healthy!”
